Change Text Size commands Monterey help

I recently had to wipe my Mac, and rebuild it manually. One of the functions that didn't make it over is increasing text size.

Previously, in Mail, I could press Control + or - to increase text size. Now, that doesn't work. I read some other posts, and they said to use "Shift Command +" but all I get is annoying popping sound (which I also need to remove, too).

This used to be something I could do as a one off - if someone send me an email with too small a text, or if my eyes were particularly worn out. Can anyone help me remember how to set this up? The options I have tried in preferences and the articles online haven't worked for me.

There is a text size selector in the Mail compose toolbar that can adjust your text size. Even without that amenity, you can select some existing text in the compose body, and then your keyboard shortcuts to increase or decrease text size will also work. They don't without some text selected beforehand though.

With a given Mail message selected, click in the message window and when you press cmd + or cmd -, the message text will change its size accordingly.
