iPad: bluetooth audio, video via hdmi?

I have a projector, I'd love to use it to watch a movie via a usb-c to hdmi connector. Alas we have a small flat, that isn't super soundproof. Whilst my kids are asleep, it would be better if my wife and I could use bluetooth (AirPods) to listen to the sound, rather than pushing it through speakers.

Is this possible on an ipad? My current research indicates that, when an hdmi cable is plugged in, the sound travels through the hdmi cable (only) and it isn't possible to split the audio / video like this... although I believe it is possible, to pair multiple sets of AirPods, but then we're kind of stuck with the iPad screen.
