I want to change the key Photo I have of a person in Photos. Can't figure out how to do that. Any Help

In the Face section double click on the person whose face you want to change. This opens the album of that person.

Find the Photo you prefer. Right Click on it and choose Make Ket Photo, from the bottom of that menu
