How does font management work on a Mac?

On Windows 11, I have a simple font manager that simply activates and deactivates collections of fonts as I need them for each job. This is a pretty easy way of managing fonts that I only occasionally need without clogging up the system with hundreds of extra fonts.


How do I manage something like this on Mac OS?

So far, all the font videos on YouTube simply just install all the fonts they want into the fonts folder and Font Book simply displays them nicely.

Surely there must be some way to turn on and off groups of fonts without adding them to the fonts folder?

Can anyone help please?
