My iPhone 12 will not update to Eastern Standard Time. Is there a way to correct this?

The time signal you receive on your iPhone is from your carrier. You should have the Settings>General>Date & Time set to Automatic. You should get the time signal from one of your local towers. Are you very close to the line between Easter and something else?
