Thank you for reaching out in Apple Support Communities. The option to view headers on sent emails in the Mail app of an iPhone is unavailable. You're welcome to provide feedback to Apple by visiting this link here: Product Feedback - Apple
You can, however; view email heads on iCloud.com for your iCloud Mail account. Here's how:
1. In Mail on iCloud.com, select a message.
2. Click, then click Show All Headers.
3. To stop showing all headers, click
