Truphone has stopped taking customers in Australia, is there any other options for getting cellular connection for a pair of Apple Watch SE's we were planning for the kids Christmas gifts?
Don't want to have to buy phones and connect that way.

eSIM is the only cellular option. You may gave to find another provider who can offer eSIM and in the absence if one and without personal iphones the Watch experience will not work for them.
Even if you found one their phones would have to be set up as family members via your iphone and it may be a maintenance burden on you.
Go big and get them gps-only watches and iPhones too!
By the way in case it wasn't clear, Watches set up for family members without their own phones can be a different provider

They are back in service now, I was able to set mine up for my mum. Just the service where she lives is bad for this service provider 😢
