If you have the first generation iPhone SE you cannot update further than iOS 15.7.1
If you have a second, or third generation SE, try and update via a pc or Mac, that tends to cost less space on your device
Update your iPhone using a Mac with macOS Catalina or higher
On a Mac with macOS Catalina or higher, you will use the finder in order to upgrade your iPhone. Make sure to Back up your device before starting the upgrade process.
On a Mac with macOS Catalina or later, you will follow the following steps:
Update your iPhone via a Mac running macOS Mojave or earlier, or on a Windows PC
On macOS Mojave or earlier, or on a windows machine, we won't use the Finder to upgrade your iOS
Instead, we will use iTunes. Make sure to Back up your device before doing any update or upgrade to your phone.

Thx. I have no clue what generation my iPhone SE is. It was a 2020 version, so maybe called 2nd generation. I have been able to update to 15.7 but shows error in updating to 15.7.1. My ipad air updated with no issues.
The latest version supported for iPhone SE (1st generation) is iOS 15.7.1.
I think I will go to the Apple store for the update, since I do not own a Mac only an IPad air which updated to 15.7.1 with no issues.
