Hey all. Apple Watch newbie here. Just got my series 8 watch. I’m wondering if it’s safe to wash dishes with the watch on as long as it’s in “water mode”..t.I.a

I would not. Apple specifically advises against exposing Apple Watch to soap or soapy water. As an FYI, all Water Mode does is lock the screen from being used. It does not stop water from entering the watch.
