When I pair my Macbook to a Bluetooth device like a speaker it plays out of the MacBook speaker instead of the Bluetooth device it is paired with.

after the device is paired with your bluetooth, open your menubar bluetooth options and ensure the device is connected.
and then use your menubar sound options, and ensure the device is selected as the output.
