Hi _GrMnM,
Are you referring to the photos you choose to shuffle for your Lock Screen? If so, that currently isn't an option available. If you'd like to see this implemented in the future we'd encourage you to leave your feedback here: Product Feedback - Apple
However, in the meantime you could always Markup to add the text to a copy of the photo to your liking. You can learn how to do that here: Use Markup on your iPhone, iPad, or iPod touch - Apple Support
