Ipad Apps Taking Up Screen
On my Ipad 7th generation, I often will hit something and the app will take up most of the screen. How do I do this? How do I prevent it? I'm not even sure what I did.

You need to explore multitasking.
Your screenshot illustrates two Apps operating in split-screen. Key to accessing and controlling multi-tasking is the small “three-dot” button that is found at the top-centre edge of the screen - and the central divider.
