Firstly the current version of Big Sur is 11.7.1

Secondly. The Contacts application uses the System Wide Font size as defined and designed by Apple and can not be increased period.

One can increase the overall System Wide Appearance of Larger Font Size by using the Scaling Feature built into the Display Applet of Big Sur as illustrated in below image

Understand, doing so will also decrease the overall Real-Estate Viewing Area on the Display
