You will have to start a password recovery process for the old password from Apple Support.

in order to remind yourself of your apple ID

Try the steps in this knowledge base article if you forgot your Apple ID Password

When Apple Support have assisted you with this, when you re-pair the watch to your new iPhone apple ID you can emter the password for the Watch.

P.S. if this phone was in fact found by you or bought activation locked you have no chance of recovering the password
