iPhone 7 can connect to a Series 5 watch as long as the watch is NOT updated to WatchOS 9 or higher. The maximum iOS an iPhone 7 can be updated to is iOS 15.7.1. If the watch is running iOS 9 or higher, it will not pair with an iPhone 7.
