Turn automatic updates off and then just ignore the notification to update. You would do this on the Watch App on your iPhone. Open Watch App. Tap General. Then Software Update. Turn off Automatic Updates.
That said, it is generally a bad decision to not stay current with updates. Updates don't just introduce new features, they also include security updates, which will protect you device.
