How do I find all my old pictures and data, after I’ve backed up my phone, and after I have completed a factory reset?

Since you're not able to view the contents of a backup, you'll need to restore it to your device to see the contents. Here's how to restore when using iCloud or one from your computer: Restore your iPhone, iPad, or iPod touch from a backup - Apple Support
If you were using iCloud Photos, they're not included in your backup as they're already in iCloud. To see what you have in iCloud, visit the iCloud website here: https://www.icloud.com/
