Hello, i just updated my Iphone to iOS 16.1.1 and i dont like how the new notifications show up. I would really like to have them where they were before the whole iOS 16. Is there any possible way to do that? Or is Apple gonna make an option in the new iOS update so i can change that?

You can change the way notifications appear by going to Settings > Notifications. Under "Display As", select "List" to have it displayed like they were in iOS 15. You an take a look at this article for more information:
