macOS Monterey 12.6.1

It's creepy that my MacBook Pro knows my native speaking language while I only use English to operate my MacBook Pro. The reason I know this because the screen saver displays definitions of words in my native speaking language. How do I stop Apple operate system from spying on my MacBook Pro?

I don't understand why you think this kind of interaction between parts of MacOS is a form of "being monitored". It's just one piece of apple software on your machine using a language or region setting from somewhere else. It is the same way the OS can add a keyboard to your Input Sources list when you add a language to your Preferred Languages list. Or assume what the default spellcheck language or list sort order should be on the basis of the topmost Preferred Language.
