Retrieve older messages greater than 40 days

If you had iCloud messages turned on, you can't.

If you had iCloud messages turned off, and you have a backup of your iPhone from before the message was gone, you could erase your phone and restore it from that backup.

Do you mean retrieve messages that were deleted more than 40 days ago? (And therefore are no longer in your Recently Deleted.)
