I want to delete my iPadOS beta and it says I must reset my iPad

What does it mean to reset my Ipad back to its original OS as I have the 16 beta

iPadOS is the operating system. To be able to use the iPad again after removing the beta, you are going to have to restore the iPad to factory to have the latest public release of iOS to be loaded on the iPad so it will function again. Hopefully you will have created a backup of the iPad that you would have archived before loading the beta, otherwise you will lose all of your content when you restore.
