Apple Watch Doesn't Record Flights of Stairs During Workouts

I recently got an Apple Watch Series 8 and have continued to notice that, just like on my Series 7, it seems unable to track flights of stairs climbed during a workout. This came to my attention initially because I tried to use the Stair Stepper workout on real stairs and nothing was recorded. That's OK, that must be for the gym equipment and not for actual stairs, I figured. But then I noticed stairs were also not tracked during an Indoor Walk, Outdoor Walk, Outdoor Run, or High Intensity Interval Training (yesterday I did 54 flights of stairs during a HIIT workout and it recorded 0). The only workaround appears to be to pause your workout while you climb the stairs, and then immediately unpause, which seems silly because stairs are a part of many people's daily workouts.

I just ran a test with 3 of my friends on 3 different versions of the watch (including the Ultra), and they all exhibit this behavior. Are there any workouts that do accurately record flights of stairs? Does Apple have any plans to record flights of stairs during workouts in the future? This seems like an odd oversight this many generations in — please someone tell me I'm missing something!
