How do I export contacts into a csv file, or export & easily convert to a csv file? Specifically, I want each field to populate its own column, e.g., a column of first name, a column of last name, a column of phone number, etc.

On your MacBook Pro, open a blank Numbers spreadsheet and also open the Contacts app. Select all contacts (or the ones you want) and drag them from the Contacts app to the Numbers spreadsheet. You can then use the Numbers File menu > Export to and export to csv format.
