My company awarded me a Apple Watch 8, the watch was purchase on company visa (thru BestBuy). I haven't open it because I would like to have the Apple Watch Ultra in exchange and of course paying the difference myself. Is that possible?

you can see if they’d authorize you to, presumably, return the watch and use that amount of money towards a different device with you paying the difference.
worst case you can sell it and use the proceeds towards what you want, but I’m sure you won’t get full price.
