I created my Apple ID three years ago but didn’t employ Apple Pay. Now I want to use it but my telephone number is different. I have deleted old one and added the new one to my profile. Anyway, after typing in my card details the program claims it will send the verification code to my OLD PHONE NUMBER and will not proceed… aarghh…

Welcome to Apple Support Communities. Did you update your telephone on the Apple ID website? If not, click here and sign in with your Apple ID and password:
Once signed in, go to "Reachable At", and add your new number to you Apple ID info. From there, your verification codes for Apple Pay will come to your new phone number.
