I want to backup my iPad but it has an MDM profile installed (which you cannot remove because it is past the 30-day period). When I reset and restore my iPad using that backup, is it possible to remove it?

No. You'll have to set it up as a new device or have the administrator remove it from the MDM first.
If the device is still enrolled in Apple School/Business Manager, the admin will also need to remove the device from that as well.
