Erase the watch completely, Settings, General, Reset, Erase all content and settings.
It should then pair with iPhone 14 on the latest iOS (16.1.2 at present)

OK thought the problem was with pairing.

The fix was in iOS16.1
I am confirmed about the problem of this update 8.7.1 by following this link Apple Watch Series 3 update 8.7.1 bricked… - Apple Community. Here I have found so many people having the same problem as mine and waiting for Apple to fix it. Thanks for offering the help though!
