How do I remove an address from Maps?

If you're referring to an address that appears as a significant location, the following steps will help you remove it:

The Maps app  uses information about your significant locations from Location Services to provide you with personalized services like predictive traffic routing. Your significant locations are end-to-end encrypted and cannot be read by Apple. You can delete your significant locations at any time—for example, to reset predictive traffic routing and similar personalized services.

1: Go to Settings  > Privacy & Security > Location Services > System Services, then tap Significant Locations.

2: Tap Clear History. This action clears all your significant locations on any devices that are signed in with the same Apple ID.
