Something has changed with the updates! Previously when I was putting my apple watch 7 on always on mode, it was just showing nice little time and date on the corner, and nothing else. But now it shows my apple watch face,even when I turn other things off, although no data, but it shows their shape.
I don't want that. I want to see only and only little time. Please bring it back :(

It sounds as if what you're describing is the screen that use to show when the watch went into Power Reserve. And yes, Apple did change that. It's now called Low Battery mode. It now shows more things on the screen.
