Some of the repeating reminders I've set up are time specific, but realistically there are some days I won't be able to complete the reminder at the time I chose. Is there a way to remind me later when the notification pops up? Maybe there's something I'm missing but I'd like to be able to push the reminder to a later time when needed.

Once the reminder notification appears, try to long press the notification so the actions box appears. This will provide you with several options to receive a new reminder for the task that you need to delay.
Also, if you'd like to see additional features added to the Reminders app, you're welcome to submit feedback to Apple at Product Feedback.
