AirPrint does not require setting up. It is a technology which is either in a printer or not.
Which Epson 8550 do you have, there are two of that numeric combination with AirPrint, as listed in Apple's document About AirPrint - SC-P8550D and ET-8550. If you have another Epson 8550 it does not have AirPrint.
