The watches need to have the Cellular option
You will need to ensure that your cellular/mobile provider will support Family Sharing and will issue the additional numbers to each child. Call them before you do anything.

I do realize all of that. But I’m wondering if then get their own phone numbers when you activate a Watch that’s managed by a parent.
The devices will have their own number, yes.

It would be pandemonium if they and you shared the same number!
I'm not even sure it needs to be the same network provider as you.
