For smaller files, you could use 1.4 MB HD floppies (if the computer is working, of course). In order to ensure that these disks are readable on a modern computer, via an external USB floppy drive, it would be advantageous to use PC-formatted floppies. A Power Macintosh 7100/66 can handle PC-formatted disks if a PC Exchange control panel is installed and active.
As Grant Bennet-Alder mentioned, the 7100/66 is equipped with Ethernet. You could create a (temporary) network, for example, via the LAN ports of a Wi-Fi router. If the 7100/66 is running Mac OS 8 or later, the following is merely one idea (should allow both Macs and PCs to fetch files):

it will be very difficult to find a computer that can still read a SCSI drive.
Does the unit power up and work? what version MacOS is it running? { OS7.1 to OS9 }
No USB, No Firewire, No Wi-Fi.
It does appear to have an AAUI Ethernet port, which converts to RJ-45 Ethernet jack with AAUI adapter.

Remember that the last floppy drive that could read an 800K Mac floppy was installed in a beige Mac, and no third-party 800K drives were ever sold. You must use HD discs to write an 1.2 MB format-- they have TWO square holes on the disc. The oxides on the ones without two holes is different, and your data will be gone in a few MINUTES if you use the wrong discs.
You MAY be able to use Mac File Sharing (over Ethernet) if you are running a later version like OS9. Mac File Sharing was widely compatible, and may be worth trying. It would share using Apple File Protocol (AFP) the current default, SMB, came much later.
