Can't format Samsung T7 SSD to APFS -- GUID NOT an option
Yes, I get it, I need to select the GUID etc. option when using Disk Utility to erase the new drive, but there is no such option. So, what do I do?

Yes, I did. In the meantime I found out that the APFS option only shows up when you select the parental drive in Disk utility (select View all drives in the View menu first, or press Apple-2 = CMD-2, then select the drive, then Erase).
Most online advices don't mention that trick, and without knowing that the option may never show.

including myself. I knew that, but neglected / forgot to mention that to you. my bad. :(
I personally have two T7 SSDs. with BOTH of them, I first needed to format them as macOs Extended (journaled) before I was given the option to use APFS. have you tried that?
