There is no option to delete eSIM on my iphone.

I recently switched from Verizon to Spectrum. I turned off the old Verizon eSIM, and turned on the new Spectrum eSIM. Everything was fine for the first month, but following the recent ios update, I'm having issues. Both eSIMS were turned on after I installed the ios update causing issues that I can't resolve, mainly MMS not working to non-iphones. I think all of these problems would be resolved if I could simply delete the former Verizon eSIM, but there is not an option to do so. The only two options I have for the former Verizon eSIM is to turn it on, or rename it. Any help is appreciated.
