How do I stop multiple files from opening when I selected only one?

This mainly happens in text edit, but has happened in other apps (like sometimes Pages opens other recents). I double-click on the file I want to open, and it also opens every document I've ever created in the app. I've checked Settings (text edit doesn't have Preferences) and can find no tips.

Any ideas?

Some apps will reopen files that were open when the app was quit. Enable "Close windows when…" in System Settings > Desktop & Dock under Windows & Apps.
