Is the watch 6 and iPhone 7 compatible?

So I have an iPhone 7 and I’m trying to connect to my new Apple Watch Series 6. I googled if they were able to be compatible on the Apple website and all over the internet before purchasing. When trying to connect, and after scanning the watch screen it says that my iOS is out of date. I looked up again on the Apple website and it says that i just need to have an IOS 14 or later, i currently have the 15.7.2. What am I doing wrong? And do I need an older watch?
