When I change the name of my new apple watch 8, it keeps reverting back to the default "apple watch" name. Have successfully done this with earlier watches with no problem. Any ideas?

The best remedy is found in the Related Article: Change the name of your Apple Watch
If this does not work any more then first force restart it
i.e. press and hold both the side button and Digital Crown for at least 10 seconds, then release both buttons when you see the Apple logo.
Then Force Restart the paired iphone Force restart iPhone – Apple Support (UK) and ensuring you have Screen Time turned off and no security apps installed.
If that is no help
Unpair and erase your Apple Watch
and then
If no better you may want to unpair then set up without restoring the backup.
You may also want to make sure the software on the watch is up to date.
If you've completed that troubleshooting and the issue is still not resolved, Contact Support.
