You can use this 'Clear Data Keep Formulas' Shortcut that contains an AppleScript I wrote a few years ago.

To set up the Shortcut just click the link above and it should display in the built-in Shortcuts app. You can install it and add it to the menu bar, or attach a keyboard shortcut to it, etc.
To use it you just select the cells with contents and run the Shortcut from the Menu Bar or Services menu or wherever you have put it. You can also just run it from within the Shortcuts app.
You can make full use of the Shortcut without worrying about the code under the hood. But if you are curious it looks like this:
