This is not new. macOS Mojave was the last version available for all 32-bit apps, for instance.
Microsoft specifically targets long-term compatibility with Windows, and even they eventually have to drag forward and break some apps, as happened with Windows NT and with Windows Vista.
Targeting backward compatibility also means you can’t move forward as quickly, or as all. And Apple moves forward more quickly than many other vendors. In past years, that meant ending floppy disks, removing optical disk drives, or removing ADB connections, removing USB-A ports or deprecating and removing all 32-bit APIs for apps, and many other examples.
If you want longer-term support, go Windows. And in recent times, Microsoft supports their apps only on the three most recent versions. And limits how long the next most recent version gets updates, after a new app version is released. Which also meant many conversations around here about the end of Office 2011, and earlier Office versions.
But I understand your position, and what you want to have happen. I just don’t expect it to be a sustainable business model for any commercial vendor, whether for individual app vendors, or Apple or Microsoft, or otherwise.
