When I select a cell in numbers, the row number is highlighted. However the colour is a pale green and difficult to see. Can you change the selection colour for the row and column?

Yes you can do that not in the Numbers app but in System Settings > Appearance:
Experiment with different Accent colors, etc. until you get something you like.
(Prior to macOS Ventura this was in a different location within System Preferences, but the ability to control colors seems to be about the same).

For Big Sur, select an Accent color in System Preferences > General that is different from the green accent color. That will change the color of the selected Row number, and the Column letter in Numbers.
