Some things to think about:

Apple Watch SE is the least expensive watch Apple sells and some features, such as Blood Oxygen and ECG are not included.

Aluminum model watches are easier to scratch. Whereas Stainless Steel is much stronger and more durable AND the screen on the Stainless Models are Sapphire and almost impossible to scratch. Stainless Steel watches come with Cellular connectivity standard, where Aluminum and SE watches offer Cellular at added expense.

Apple Watch Ultra is the newest and most exciting Apple Watch Apple has introduced in years. It's also the most expensive, but its features and durability justify the cost. It is also the largest watch at 49mm, so your wrist size should be considered here.
