My 'system preferences' has simply disappeared from the drop down choice when I click the Apple Icon. It is also not in my 'applications'. How do I reinstall it ? I just updated my Mac Air to the latest updates but it is still missing.

Hey – happy new year!! Is this menu option (which is now name 'System Settings...' (1)) that disappeared from your menu, once you clic on the apple symbol? I just wanted to make sure we are talking about the same thing...
If yes, can you please check on the Console what are the files you have under /System/Applications? (2)
