Is there a way to change what happens when you double-click the power button on an iphone? I want the camera to open instead of my apple wallet when the power button is pressed twice.

Unfortunately, it is not possible to "re-map" the Power Button to do anything other than open your Wallet when you double-press.
Alternatively, you can use the Back Tap feature to launch your camera quickly.
