How do I add an activity to my watch that’s not on the list? Ie outdoor rowing?

How do I add an activity that is not on my list of activities I.e - outdoor rowing.

Apple Watch SE, watchOS 8

While swimming laps my watch stops displaying the lap count and shows the activity rings instead. What do I do to keep the laps counted instead? can you swipe right to bring up the activity can you swipe right on Apple Ultra watch to bring up the activity

Wouldn't indoor rowing pretty much be the same as rowing anywhere? Rowing is certainly an activity available for Apple Watch --> Workout types on Apple Watch - Apple Support

It says indoor or SIMILAR activity.
