That is all ok. The AppleCare is for the computer and is linked to the serial number. And when you set up the new Mac after it arrives, you can set it up with you as the owner and administrator. You don't even have to have set up an account for your Mom on the new Mac.

I have purchased new Macs for my wife and daughter. They are set up for each of them with their names, their user accounts, and their Apple IDs. Thank your Mom for purchasing the Mac for you, and then set it up how you want it when it arrives.

If she linked the AppleCare PAYMENTS to her Apple ID account with a credit card linked to that Apple ID, she will have to continue paying for AppleCare each year. But even that you can probably change yourself or by contacting Apple.
