Why can I not edit or update track information or album covers of songs in my mac’s Music library, while it’s connected to my HomePod. Whenever I try to do so, it doesn’t accept the edit. I do not subscribe to apple's music service as I don't need it, nor want it. So, that is not an answer, but a sales pitch, so don't bother suggesting it.

Why do should I have to disconnect the Bluetooth signal to do this incredibly simple thing?

I don't know why the limitation exists either, but you're not able to edit metadata while using AirPlay. See Repair security permissions for iTunes/Music for Mac - Apple Community for other potential reasons why edits might not stick.
