When using my "Workout" app on "Outside Walk"-- the time doesn't pause when I stop for a red light or to chat. is there a setting to make it pause when I pause? My friends with Garmins have this feature.

You are quite correct, I forgot that only those two can be auto paused.
Did you try walking but using the Running workout? With auto pause turned on however you may have to walk briskly to avoid false pauses! Test it out and see at what pace it pauses. I don't think it is adjustable.
Other than that, a quick swipe L to R on the workout face will pause it in a second.
Thanks. under Auto-Pause, it only lists two workout types: Running and Cycling--so I turned Auto-Pause on for these. It will be helpful to now have pause work for these types of workouts, but I also use the Workout app for "Outdoor Walk" and I want my Watch to pause when I stop while using this. Do you know if this Auto-Pause feature is possible for "Outdoor Walk"?
