I have been onto appleid.apple.com and checked my first and second names are the correct way round, however my watch continues to refer to me by my surname and e mails I send arrive showing my manes the wrong way round. What can I do to correct this?

You'll want to ensure that My Card on your iPhone reflects the correct information. This information is used by Siri and other features. Add your contact info on iPhone will walk you through getting My Card updated.
"Edit My Card
Tap My Card at the top of your contacts list, then tap Edit."
For your email, this will depend on what type of account this is, and where you're seeing the incorrect name. If you're seeing the wrong name in the "From" field of an email, updating My Card should reflect these changes as long as the email address is added to your contact information. If the wrong name appears in your email signature, check out Change email settings in Mail on iPhone to change that.
"You can customize the email signature that appears automatically at the bottom of every email you send.
> Mail, then tap Signature (below Composing).Tip: If you have more than one email account, tap Per Account to set a different signature for each account."
