My husband and I share an Apple ID because I want to share all our information; calendar, contacts , etc. we both have Apple Watches and the health information is all lumped together. How can I separate the watches but keep the other information on the phones?

You can't. Sharing an Apple ID causes these types of issues and is why its not recommended to share an Apple ID. As far as Apple Services, it sees one user, not two.
Apple offers what is called Family Sharing, but that would not include contacts, but I do believe you can share calendar.
